Standards & good practice

Documented, practical and scope-aware

Commercial kitchen extraction systems require regular inspection, maintenance and cleaning to control grease accumulation and maintain safe and effective operation. FIXAKITCHEN follows a documented cleaning and inspection process and records the areas serviced.

Cleaning procedures and service documentation can be carried out with reference to applicable commercial kitchen extraction maintenance requirements, including SANS 1850 where specified by the client or project.

Applicable requirements depend on the installation, client specifications, insurer requirements and scope of work.

Why extraction cleaning matters

Grease affects more than appearance

Accumulation may restrict airflow, increase the load on extraction fans, contribute to unpleasant odours and create hygiene and grease-contamination concerns. Regular removal of accumulated grease can reduce one of the significant combustible materials present within commercial kitchen extraction systems.

Cleaning access also creates an opportunity to identify damaged filters, loose wiring, fan problems, duct defects and excessive grease accumulation early.

Access defines the result

Important access note

Extraction systems vary considerably between sites. Duct sections concealed inside ceilings, shafts or building structures may require suitable access panels before they can be properly inspected or cleaned. Where an area cannot safely be accessed, it will be identified as inaccessible or excluded on the service report.

Grease and cleaning residues

Grease and cleaning residues generated during the service are contained and handled according to the site conditions and agreed scope. Where off-site waste transport or disposal is required, applicable waste-management requirements must be followed.
